The answer is YES.
1. In Word, position your cursor where you want the
icon to appear.
2. Insert > Object
3. Select the tab, "Create from file"
4. Click "Browse" and locate your .pdf file
5. Click "Insert"
6. Select "Display as icon" radio button
... and you'll see the Adobe Acrobat icon embedded in
your Word doc.
I just tested this. I double clicked the icon and it
did launch Adobe Acrobat.
