I had a similar problem, and changing Arial to Helvetica worked fine. It's a
lot of work, but your documents should distill correctly. The documents I
started with looked OK on the original platform and on the screen, but the
pdf and print outputs substituted Courier for Arial. Turned out that the
Arial font was unsupported someplace along the conversion trail, so it
reverted to Courier. Some, but not all, of these docs had been created on
Macs and converted to PCs.

I'd suggest a trial run with the text in one figure converted to Helvetica
to see how it looks.
