Of course, that assumes you can leave copies of your samples behind.

Pieces of work from the project I am currently working on that find
their way into my portfolio will be under the restriction, spelled out
in my contract, that I will not leave copies behind when pursuing
future contracts and that any copies I have will remain in my
possession and under my control.

Furthermore, while permission will not be unreasonably withheld (again
spelled out in the contract), I will need the company's written
permission to include any pieces in my portfolio.

As the project progresses, I will be keeping a list of potential
pieces so that, near the end of the project, I can pick a few really
good ones.
