You're taking a degree program. My experience in earning degrees has shown
me that there will be classes you WANT to take, and classes they MAKE you
take. Sounds like your theory class is one of the latter.

Do your best to muddle through, and soon you'll have that piece of paper
you want. That's what you signed up for, so grin and bear it! (Whether you
NEED a degree in tech writing is a subject that's been exhaustively
debated already on this list, so we won't go there...)

Managing information IS an important skill, but I have no idea if the
class you're taking is a practical one. But it can't hurt! And actually,
it COULD help you, in that it might provide you with tools, terms, and
concepts that will impress the kind of manager who is impressed by that
sort of thing. Nothing wrong with that!
