I'd say part of it is attitude. Some people don't like learning new things. Others love diving into to new products or technologies and learning to how make them sit up and dance.

Another part is that some people are fast learners. One advantage that ex-academics generally have is that they have learned how to learn quickly. For people who, like myself, have spent far too many years in university, this is often the most useful -- and most transferable -- skill that they've picked up.

Knowledge of related subjects is also a big help. If you've used something similar, it is much easier to pick up something new. (This is another way that people who like exploring new subjects benefit -- they are more likely to have explored related subjects.)
