What you are dealing with here is a simple matter of verb tense and the
difference between past tense and past perfect tense.

Past tense in the "drink, drank, drunk" and "eat, ate, eaten" scheme of things
is the middle verb and is used when it is the sole verb following a subject.
The last verb in each series is the past perfect case and is used whenever you
have a helping verb (have, were, etc) along with the actual verb.

In the sentence "It's a pretty rough day,...." You were using "will be" along
with the actual verb, so you need the past perfect tense "drunk."

The same is true for ate/eaten. I ate earlier. I HAVE eaten lunch today.

Does this help?
