I've had luck with Kaleidagraph, tho' not in the last year or
so. It was more versatile than Excel at massaging data before
plotting. However, Excel may have improved.

Lately, I've been using Matlab because I have it around for
other purposes. It's very, very versatile for data analysis (and
many other cool things!) but is expensive. It also has more of a
learning curve than tools like Excel or Kaleidagraph. Using it
for simple plotting would be like using an elephant gun to hunt
deer.
