So here's my question: Which program should I use
to get that book type format?

A program that you're comfortable with and that has good and solid
layout capabilities. You cannot go wrong with the big three layout
programs, InDesign, QuarkXPress, and PageMaker. FrameMaker is also an
excellent choice.

If you have easy access to none of these apps, you may want to have a
look at RagTime, that also has extensive layout capabilites and can be
downloaded free of charge (for privat use) from www.ragtime.de. Be
aware, though, that the interface concepts differ somewhat from that of
layout or word processing applications and may take some getting used
to.
