Since you're the second poster to mention Caslon, I thought I'd mention an old adage among type-setters in Britain: "When in doubt, set your copy in Caslon." There are several versions of Caslon about, and almost any of them is high on my list of default fonts.

A great summary of what to look for in a font.

About all I would add is that, if the work will be displayed on-line or faxed, you might want to look for a font whose strokes are very regular. Varying thicknesses of line often don't translate well into pixels.

For the same reason, serifs often don't render well on the screen or on a fax. An exception to this generality is slab serifs, such as Memphis or Joanna.
