I would think you should list them, along with summaries of key projects,
something like this:

1997 - Present:
Tech writer for SWS, a blah-blah-blah company that provides blah-blah-blah
to local companies in the blah-blah-blah industry. Fulfilled individual
assignments ranging from one day to four months at the following firms:

* Company_One - created a 200-page manual for improving widgets' self
esteem, using RoboWidget and FrameWoozler.

* Company_Two - developed online help system for a software product
designed to calculate the frequency of teenage usage of word such as
"like" and "you know."

* Company_Three - you get the idea...

This accomplishes a few things - it shows you have worked in more than one
environment, illustrates your versatility and underestanding of this
stuff, and might have some good name-dropping potential, if any of those
companies are well-known. If you think it might help, you might also
include how long you were with certain companies, but that could work
against you, too, if there are too many 1-day gigs. Good luck.
