But for Word (and I guess for anything else that accepts
ANSI keystrokes), can anyone direct me to a list of which symbol maps to
each key sequence?
Microsoft, in its infinite kindness, has provided a reference for you. There is a utility called Character Map that comes with Windows since time immemorial. It displays a list of characters; when you click on a character, the Alt key sequence is displayed in the lower right corner of the window.
