This is just a hunch:

OS X has its own Preview application that can view PDFs (also can create them from within Print dialog boxes). It may be that Preview is set to be the default PDF viewing application, but IE doesn't know about it, or can't hand off the PDF to it. Some time back, there was a problem of conflicts in browsers which had a PDF viewing "helper" application specified, as well as having a PDF viewer plug-in installed. The conflict prevented the viewing in PDFs in either the external helper application or the browser's plug-in.

As I said, just a hunch, but worth investigating.
