I've used single-sourcing to produce content for multiple audiences with conditional text (80% re-use).
At my current job, I use use the same chapters in multiple books for different audiences (5% re-use).

I am moving to XML to be able to be able to use smaller sources of information in multiple formats and for multiple audiences. I am actually in the process of creating more modular documentation. It does take time, but I am getting there. My collegue is back from a 12 months maternity leave, once I get her up and running to all this new stuff, we should get a good cruise speed (Goal: 35% re-use).
