D'oh.... Naturally, having asked that, I found an answer.

Earlier today, I had opened the View > Menus tab. It offers a submenu:

Quick
Complete
----------
Modify

I selected *Modify* to see what the heck it was. Somehow,
in the process, I must have selected *Quick* in place of
the default *Complete*.

Selecting *Complete*, I have my full menu back -- and it DOES include Publishers.
