Well, though I'd design the doc to be consecutive pagination, that's not
probably a choice here. Still, if you use page x of y syntax, does that
mean in the addendum you have "page IV of 20" or "page IV of XX"? Yet
another reason to avoid Roman numerals altogether. I think, though, if
your goal of having an "of x pages" construct is to inform the reaer where
they are in the doc, then you have to indicate the "twentyness" of the
document, if you will.

There are several traditional choices here, none of which are reflected in either the OP's question or JS's reply, although JS is on the right general track.

Option A--continuous numbering:
1, 2, ..., 20 (for all pages).

Option B--chapter numbering:

1-1, 1-2, ... 2-1, 2-2, ... (for the first 10 pp).
A-1, A-2, ... A-10 (for the addendum).

Option C--page x of y:
1 of 20, 2 of 20, ... 20 of 20 (for all pages).

Option D--continuous numbering with appendix:
1, 2, ... 10 (for the first 10 pp).
A-1, A-2, ... A-10 (for the appendix) [and B-1, ... for appendix B, of course].

Option E--continuous numbering with backmatter:

1, 2, ... , 10 (for the first 10 pp.)
i, ii, ... , x (for the backmatter).

And, by the way, is it really an addendum? If so, it should be numbered the same as the main document (option A or B). If it is an annex or an appendix, then A-number it with arabic numbers starting with 1 (option B or D). If it is backmatter, then either number it with the rest of the book or use lowercase roman numbers, starting with i, even if you have frontmatter with lowercase roman (option A or E).

Uppercase roman is hardly ever used for folios, even though most publishing programs support it.
