I've used Excel for a number of things, documentation-wise:

Databases
Comparison tables
Charts and graphs
Product/process matrix
Forms
Overviews (condensing or repurposing information into tabular form)
Typical spreadsheets, such as number crunching and analysis

You're only limited by your imagination and your skills.
