Now, this sounds a little alarming, being the lone
writer in charge of documentation. Can anyone
elaborate on this, and maybe share your experiences
working in an agile environment?

Thanks,

There is a little bit of wisdom among shareware developers that it is better to spend time on adding features that benefit the user rather than coming up with elaborate schemes to prevent a user from hacking a free license by going around the registration process. What I believe this "Working software over comprehensive documentation" is trying to say is that if the software worked better and was more intuitive for the user then less documentation need be required to explain or demonstrate its use. So in this case "more is less."
