...that when I have a day where I don't get anything new written at
work, I'm in a lousy mood all evening, but when I have a productive
meeting with a SME and get a new topic documented, the clouds go away
and everything is right with the world?

Yesterday, three meetings with SMEs were cancelled at the last minute
each and I ended up getting almost nothing done. I was not a pleasant
person last evening. Today, two of those got covered and one that I
wasn't expecting, I have 6 pages of notes and two days worth of work
that I should get done by tomorrow morning, and I'm much happier.

Is it only me?
