Ashaki K. Hamlett <ashaki -at- altair -dot- com> asked, "How do others handle documenting GUI labels that contain punctuation?"

References to GUI elements appear in a different font, so this does not usually become a problem. If the user might misunderstand, I would leave off the GUI punctuation.

Usually, the user understands if you say "Click Ok" and the on-screen element says "OK!"
