Here is a setup that will allow you to record for hours (literally) in
high-quality stereo, and will get you out the door for less than $200:

(1) iRiver IFP-799T MP3 Player/Recorder (1 GB capacity, flash memory
based) - $150 at B&H

(2) Sony omnidirectional stereo microphone ECM-CS10 - $40 at B&H

The iRiver comes with free software to transfer recordings to and from
a PC or Macintosh as MP3's.

The 1GB capacity model will record high-quality stereo for hours; it
has a built-in microphone, but the addition of the external stereo mic
works great on a conference table. The mic is tiny; the recorder is
approximately the length and width, and twice the thickness, of a
standard pack of chewing gum.

The basic technique is this -

Set up the iRiver to record in "External Microphone mode"
Plug in the mic
Set desired recording quality (I suggest Stereo, 44Khz, 96 kbps for voice)
Record the event
Transfer to your computer for playback

With the addition of an editing program (such as the free software "Audacity" -
http://audacity.sourceforge.net/ - works on Windows, Mac OSX) you can
also edit recorded files on your computer.
