Probably best would be to create an Acrobat printer on your desktop and drag
a few dozen files at a time to the icon to make pdfs. Then use its indexing
facility to make them all full-text searchable from a pdf page you create
just for searching. I did this a couple of years ago and it worked like a
charm.

But if you're looking for a flat file report of the file trees, try this one
for $30, or if you have any kind of a skilled programmer in your
organization, they could probably whip up what you need in just a few hours.
