The print server usually tracks the time, origin, destination, and page counts of each job it handles. You'd have to find the log or queue file to which it writes this data. Whoever is responsible for configuring/administering the printers on your network should know where this file is, or you can locate it yourself with some sleuthing.

If you cannot discern the culprits from the data in the print server log, you may want to get a tool such as WatchDog Print Monitor (http://www.adiwatchdog.com/) which costs about US $500 for a server license.
