We have such a situation - wireless networking throughout the building
with secure VPN access to behind the firewall, and it's wonderful. I take
notes on my laptop all the time. I'm particularly fond of MS One Note - it
gives me a centralized note-taking application that's easily organized by
product or project and easyily searched.

The only problem with taking notes on a laptop is the inability to do a
quick sketch.
