I generally rely on the Web for this -- the company's own site first, then anything else that comes up. I'll often do a quick skim before I send in my resume, to make sure that it's a reasonable domain fit, and then spend more time there before the actual interview.

I don't think I've ever interviewed with HR. I try to go in with a list of vaguely intelligent :-) questions about their products and the company - history, future plans for developing whatever it is they do. With writers, I mostly ask about the existing documentation, review processes, and relationships with other departments. I might ask about tools if there's anything usual about the set in use. With developers, I want to know more about the product, what they see as their doc needs, and about their preferred methods of working with a tech writer.
