This question comes up periodically. There are many ways to get real-world
experience and pad the resume.

1. Start looking into some of the open-source products and get involved in
the documentation groups. I absolutely hate using open source software
because the docs are non-existing or just plain bad.

2. If you currently have a job, look for things to document....equipment
whose manual has disappeared, processes for completing certain tasks, etc.

3. Volunteer your services to a non-profit in your area and see if you can
volunteer your services.

4. Start producing a newsletter for your religious institution.

5. Document common things that you do around the house.

6. Document equipment from around the house.

7. Document an existing software package. Especially document things that
you've discovered how to do, particularly if the existing documentation is
lacking in that particular area.
