"Write a short instruction manual on making the hot or cold beverage of
your choice. Include everything you would normally include in an
instruction manual."

You don't actually need to know how to do it in order to check their
work. In fact, in something you don't know how to make the missed steps
will be more obvious. What you want is for them to make a decent stab
at preparation, the step-by-step instructions, notes of things that
could go wrong or might be dangerous, maybe some troubleshooting at the
end. The actual thing being prepared is entirely irrelevant.
