My speculation is that the term greeking comes from "it's all
Greek to me" and is basically a bit of printers' humor.

Except that the process of substituting the Greek letters pre-dates the
"it's all..." phrase. Maybe somebody bought his press at a yard sale and it
didn't include the Greek stamps so he improvised with Latin and the practice
caught on.
It's been only recently, after all, that the definition of a "literate"
person meant that they could write and converse not only in their native
language but also in Latin, Greek, Hebrew, and at least two other modern
languages. I was _very_ impressed (and humbled) by my grandmother's high
school report card!
