Dan's suggestion of assisting documenting Open Source projects is an
excellent idea.
If you can't find local volunteer work (church, organization, and
such) to create portfolio material you could take a software
application/process you are familiar with and create something on your
own like "How to Install Microsoft Office 2000" or what have you.,
Another effort you could do is always take poorly written document
XYZ, improve upon it as you can, then in your portfolio show the
before and after. It is always nice to say you saw room for
improvement and took the imitative to touch some things up. (smiles)
