I wouldn't say "never".

It's certainly true that the OS manufacturers don't use that word to describe their controls... But just as you might write about a "work order" or "customer record" rather than a "dialog box", so can you describe a set of choices as a "picklist" or "pick list" if that's your industry's/company's name for the thing. The fact that the picklist is implemented using Apple's list boxes or Microsoft's combo boxes or whatever is immaterial.
