Not familiar with Word 2007, but here is my suggestion (it works for Word 2003...not saying much I know but maybe it will help)
Create your table of contents like normal, then create a table of figures (using table of figures) then for your table of tables try this:
In the TOC dialog box, change the options for the styles that show up in TOC. Select only the table style (maybe a caption style or something). Delete all other styles from options.
Create TOC (for list of tables) and when it asks you if you want to replace the existing TOC click No. It works for Word 2003, but Word 2007...I am not too sure about.

The short answer is "Yes, of course." But I expect you're really looking for details on how to do it.
Display the Reference ribbon and mouse over the top item in the Captions section, "Insert Table of Figures". The explanation of the command will tell you that "A Table of Figures includes a list of all the figures, tables, or equations in the document." If you click the command, you'll find that the dialog lets you set up the "Table of Figures" exactly as the description says.
