A lot of your answer will depend on the specific Wiki being proposed.
Having tried Word's HTML output I recommend strongly against even
considering it. You may want to write your own VBA macro to convert
the Word styles to the specific markup you need and then export as raw
text. At the very least use "Filtered HTML" output if you don't want
to write VBA.

Some wikis provide macros or plugins to convert Word documents to
their format. Search for Word2TWiki and Word2Wiki to find a variety of
plugins and VBA macros that manage the conversion directly into markup
for specific wikis.

The software itself may provide a clean cut-and-paste function. For
instance, TWiki (since version 4.2) includes a variant of the TinyMCE
plugin found in most blogging platforms that strips Microsoft "gunk"
from Word text pasted into their WYSIWYG boxes.

Note: "gunk" is the term used by the plugin. So no flames please. ;-)
