Filehamster is a stand-alone program that saves versioned backups of watched
files, except that it works automatically anytime you save the files rather
than when you decide to check in a new version. Can produce a lot of
versioned backups, depending on how often you close editing sessions and
save files.

I don't know of any VSS/SVN-type apps that work on a single workstation
rather than on an enterprise server, but I'd be willing to bet that someone
has built one somewhere.
