Wanda,
Have you explicitly asked your former employer if you can use a brief
excerpt as a writing sample? The worst that could happen is they say "no"
and you are right where you started.

(I was also in the same boat with NDAs that contained my best work at the
time. I managed to talk my way around it in interviews, somehow).
