I agree with Fred and Tony, if you can skip Word 2007. It will still be painful to move from a menu-based tool (2003) to a ribbon-based tool (2007 and 2010) but 2010 does have both the ribbon and menus. Not to mention that 2010 is more stable and feature rich than 2003 with better open XML support (OOXML) using building blocks - for those who care for it. It's graphics engine has not been truly updated and remains closely the same as 2003.
Windows 7 is my favorite Windows desktop OS by far, with much better network support and operating stability among other things. It is also HAL (hardware abstraction layer) independent which allows the user to swap mainboard architecture, like AMD to Intel or vice versa, without reloading the operating system. I had to do that a few times and I was very impressed with this capability.

There are some who say that skipping every other upgrade is the best tradeoff for minimizing upgrade expense and the loss of productivity while learning a new UI while still remaining reasonably current. In your particular case, you have the perfect opportunity to follow this approach and avoid Microsoft's second-least loved OS version (Vista) and a relatively unloved Office version (2007) by upgrading directly to Windows 7 and Office 2010.
As far as reasons to make the jump, here are a few:
- Windows 7 boots *much* faster than Windows XP
- Windows 7 is a 64-bit OS so that you can install more than 3 GB or RAM, speeding up nearly everything
- Windows 7 makes better use of the dual cores in the T61s CPU, speeding thing up further- Windows 7 is much more stable than Windows XP; in 8 months running Windows 7 on my company T61 I've had zero blue screens
- Windows XP no longer receives "mainstream support" from Microsoft; it only gets "extended support" (security fixes only)
- Office 2010 doesn't look very much different from Office 2007 (except for Outlook...), and most of the changes (redesign of the File menu to show recent places [directories] as well as lots of recently used files) are positive from a usabilithy standpoint
- Office 2010 apps (and 2007 also) support generation of PDF as a built-in feature; no Acrobat or other third-party tool required
- Customizing the UI is much easier in Word 2010 than Word 2007
- The navigation pane in Word 2010 is very useful, particuarly in combination with Find, which now displays a list of all instances of the item being sought in the navigation pane as well as highlighting each instance in color in the body of the document
- Office 2010 is much more stable than Office 2007, which seemed to have some issues
