Craig,

I've been using Evernote for quite awhile now. It's not complicated, easily
adaptable for different workstyles, and has all the critical browser
extensions and mobile apps (I'll note that you need the premium version to
allow the iOS app to work wirelessly). I will say that with recent
versions, I've had some difficulty copying some web pages out of Firefox,
but that's a relatively minor annoyance that I haven't looked into
resolving yet.

You should also check out Springpad, which has many of the same features,
and has some social components. http://springpad.com
