I've used Adobe Captivate to capture step-by-step procedures. Instead of video, it captures screen shots and on-screen activity (mouse movements, clicks, text entry, etc.) and it can also capture voice conversations during the procedure. The advantage of that is that all the screen shots are already done as individual files. You can, however, edit the whole thing, add voice-overs and save it as a video file or a Flash file.
