My experience has been that professional technicians tend to prefer numbered instructions with line drawings that isolate the components involved in the procedure while DIY consumers tend to prefer animations that show entire assemblies with components highlighted.

I've never talked to anyone who preferred a camera-shot video, but have heard lots of complaints about how hard it is to pick specific components out from wiring, pneumatics, hydraulics, etc. in such videos, and about how peoples' hands in the videos performing operations obscure their view of the parts.
