I would just like to reply to this thread from a (current) student's
point-of-view.

I am in the Scientific and Technical Communication program at Michigan
Technological University, and I have, if anything, *more* experience than
I can easily list on a resume (including doing resumes for people!). All
of the ways to find experience that were listed are very good. I have
done 10 months on a part/full-time co-op and I have done work for a local
non-profit organization.

I have also done brochures and flyers for on-campus organizations and
other departments. There are always people needing publicity, editing,
writing, etc. done for them.

In addition, several professional journals come out of Michigan Tech and
these journals provide the students with editing experience.

Recently, a friend of mine was not allowed an interview at a contracting
firm because she did not have any "experience." But when she went to
another such firm and showed them what she had done (without first
mentioning that she was newly graduated) they were impressed.

Overall, I have not found it hard to get experience while still in school.
Whether or not this will help when I graduate (in four months) is as yet
unknown.
