I can't speak for Word 7, but Word 2 and Word 6 have always stored document-level information in the last paragraph mark (much like WordPerfect stored this information in the document "preamble"). The easiest way to select only the content of a document is to press CTRL+END and then CTRL+SHIFT+END. This will select everything but the last paragraph mark.
Also, remember that style properties from a source document will override properties for a style in the destination document that has the same name when more than 50 (?) paragraph marks containing that style are pasted.
