Postscript files are generally text files, so you can edit them (in
theory). However
Illustrator can open PS files, but can only handle a subset on the
postscript command syntax. There is a Mac program, epsConverter, that is
supposed (ie occasionally) to do this process.
There is a Mac program called Tailor that opens ps files for editing. Do a
net search for it.
Check out the postscript newsgroup, specifically its FAQ: this deals with
this problem.
