I use a scripting tool and have set up a script that lets me select some
text, click on a button, and it will ask me for a name for the text file
that it then creates. I also have a simpler version that saves a complete
email message as a text file under its original name, with an incremental
number if the name is already used. If you happen to be using a Mac, feel
free to email me for further details. If not, there is still probably
some scripting product out there that could do the same thing.
