Actually, Sans Serif means "without serifs". Serifs are the little bits on the
letters at the top and bottom. Ariel is a Sans Serif and Garamond is a Serif
font.

My understanding is that those little bits lead the eye across the page and
therefore increase reading speed. That wouldn't apply in the case of reduced
pages and other special cases, though.
