Dan:

You convert your PDF to their encrypted format, at which point it's no longer a PDF -- it can't be viewed using Acrobat Reader.  Your audience has to download a special "Copysafe Reader" application to view it.

And... The "impossible" in their claim should be read as "unlikely that a casual attempt will succeed".
