I'm a little uneasy about such reworking. It implies that quality of work was what you could do then (and presumably can do even better now). It also implies that was what you could do under the pressure of deadlines.

On the other hand, yes, you want to show your current skills. So, I would either leave them the way they are, or rework them but change them so you don't imply that they were produced at "company x". Just present them as sample documents that you recently created (which is what they are).
