Thanks to everyone who responded (and quickly!). The two options I was given
were:
* Create a macro to do this.
and
* Customize a numbering style:
1. From the menu, select Format, Style.
2. On the Style window, click Modify.
3. On the Modify Style window, click Format. Select Numbering from the
drop-down list.
4. On the Bullets and Numbering window, select the Numbered tab.
5. Select a numbered style and click Customize.
6. In the Number Format field, type the word you want to use as a
bullet.
7. If you want to establish a certain font for the word, click the Font
button.
8. In the Number Style field, select (none).
9. Tweak other settings as necessary and save.

Yes.
If you go into Numbering (from the Style dialog, once you've created your
style), select Outline Numbered. Select one of the styles and click
Customize. In the Number Format field, type your text. In the Text position
box, insert the position of the indentation. This should do it.
If you're localizing the document, make sure the localization vendor knows
where this text originates.
