Just one: consistency. Nobody will understand your material better, or
fail to understand it, based on whether you capitalize or hyphenate
e-mail. It's irrelevant to the goals of technical writing.

Pick one, and make sure you use it consistently throughout your
documents, solely for the sake of looking professional.

Then go write the rest of your material. Hurry, you're on deadline.
