I usually say something to the effect of "The Requested Lifespan field is
set to 85 years by default, but you can change this by choosing Eating
Well from the Lifestyle drop-down list."

The actual structure of the sentence varies by setting, but saying "the X
is set to Y by default but you can change it" part is pretty consistent.
