I say:
I don't usually mention the defaults in the procedure or field definitions.
Generally, I have a blurb in the Document Conventions section that says all
screen shots reflect the default values unless otherwise indicated.
I do this for a simple reason, with thousands of pages of guide/help and
frequently changing defaults, it would be an administrative mess. Default
values are too easy to miss when they are the only update to a
dialog/window.
