Steve,
I don't cook, I bake. For those of you who don't know, there IS a
difference.
Anyway, if you don't have it, go to any bookstore and take a gander at Rose
Levy Berenbaum's _The Cake Bible_ or _The Pastry Bible_. Rose is a baker
extrodinaire, and she's really into the whys and chemistry of baking. She
presents her recipes in a straightfroward manner AND includes a sidebar
that tells you why you always all salt to a recipe with baking powder.
Not only have I garnered great recipes from her books, but I've learned
about "how" to experiment. I think you'll like her style and it should
give you some ideas.
