I suggest that you get a trial copy of a program like RoboHELP (really
popular) from www.ehelp.com and try to create a small online help project
using it. KEEP IN MIND that the trial version lasts only 15 days, so you
would have to create a simple documentation plan/outline ahead of time so
that you could only work on learning the tool and creating a piece for your
portfolio. Good luck.
